Latest research on the impact of food on our health uncovered terrifying facts. Fast food consumption has bad consequences for human health and provokes diseases, such as heart diseases, depression, headaches and many others. The increase of consumption of fat and sugar causes increase of obesity. This tendency is very good illustrated on the example of younger generation; representatives of witch consume big quality of fast food. Authorities have finally paid attention to these problems. There are several ideas about the possible ways to deal with this problem. Some propose to limit the use of saturated fats, such as some fats and margarine, in the production of fast food (Caraher, 2005). Others propose to raise taxes for the food, which has high percentage of saturated fats. This will naturally lead to the growth of prices on fat food and there is a hope that it will reduce its consumption. This kind of strategy had good results in the case with alcohol and tobacco. Implementation of tax on these products resulted in the raise of the price for them and finally reduced their consumption among the population.  Approximate counting concerning the impact of higher taxes on the consumption of fatty food forecast that these taxes will reduce the consumption of fatty food by teenagers and low-income families (Curry, 2004). There are some possible negative consequences of such policy. Despite this policy will have a positive effect on the quantity of fatty food, consumed by the population, most probably it will deprive people of their free choice. State tax policy should be combined with information campaigns, aiming to explain the harm to the health done by the consumption of fast food. Raising taxes for fast food and good informational campaign can give good results and bring up new habits of healthy eating.

Some people like the proverb “We are what we eat”. Partially this is correct, healthy food plays a vitally important role in our lives, however very often people don’t have time, don’t have wish or simply don’t have enough knowledge for improving their eating habits and passions. Studies, conducted in theScrippsResearchCenter, showed, that junk food has even some addictive properties, which is close to drugs (Choueka, 2005). A rat, which had been eating junk food for several days, becomes dependant on this food pleasure, thus there are changes in its brain and as soon as junk food is replaced by other healthy foods, the animals refused to eat at all and preferred starving. Situation with people is probably not so pitiably, however serious enough.

People, who like junk food, especially children and teenagers are often not aware of all the hazards of this type of food, they just don’t think, that junk food has so much fat in it, that such loads of saturated fats would absolutely negative influence their figure and weight. Subsequently overweight causes further problems with numerous diseases. Usually too much salt is included into junk food, there is enough salt in normal every day food already and certainly the norm is forgotten, when people start to eat junk food additionally. Sugar is also a sufficient component of junk food, most of people are aware of the possible impact of sugar over balance upon the general state of health, of teeth, heart, blood and certainly weight.

Especially a great problem in case of unhealthy food is caused for children and teenagers. I have a great example under my very nose – this is my cousin, who is a teenager and is a real fan of junk food. Her daily food allowance consists mostly of hamburgers, pizza, cola, ice, bars of chocolate and so on. Having communicated with her about this issue, I could point out several reasons of this. First of all there is always a good example of her friends – eating the same type of food. When they go out together or celebrate any holiday – junk food is the best choice for them. She is young and inexperienced and thus not able yet to cook herself, that’s why, if she is alone at home – the quickest and the easiest way for her is to call pizzeria. And finally the most important reason is advertising. “Fast food advertising is the promotion of fast food products and ventures through a variety of media. Fast food advertising campaigns are not as highly regulated as some other products, such as those imposed on alcohol advertising, but there are often public calls for their promotion to be minimized” (Caroline, 2006). The general stake of the ecoproducts inEuropemakes about 3%. The volume of the world market of the ecologically clean foods of feed in 2004 made more than $28 milliard. The world demand on organics annually increases on the average on 15 – 20%. And of course the producers react on this fact. They produce more and more healthy food.

According to Bellenir (1999) in Europe and theUSAthe ecological foods are spread not only by ordinary supermarkets. There is a great number of the specialized trade networks, for example, American Wild Oats Markets or Whole Foods Market.

It is necessary to be very careful with the genetically modified products. Many specialists consider that the artificial shuffle of genetic structures – it is not an exact science that is why the consequences of the games with DNA may be the most unforeseeable. “Greenpeace” does not consider GM-products safe, that is why they can not be refer to the healthy feed. Pat Vendetti, the coordinator of the genetic company “Greenpeace” considers that the future is after the organic foods of feed, the production of which does not undermine the ecological and biological variety, does not conduce to the chemical contaminatio. In 1998 the professor of the British university of “Aberdino” Arpad Pushtai conducted a number of experiments with animals which prove the connection between the use of foods with maintenance of the genetically modified ingredients and the development of cancer of gullet, diseases of liver, allergic reactions. The GMI-containing products do not have any dietetics advantages comparing to the ordinary unmodified foods.

Ecological foods are produced in accordance with the ecological norms agriculture without application of extraneous chemicals, id est without fertilizers, dyes, strengtheners of taste, preservatives. (more…)

The enriched foods have in their composition the vitamin complexes, microelements, probiotic microorganisms (useful bacteria) and prebiotics (food for them). The name and amount of the similar sort of “flora and fauna” is necessarily specified on packing. It is possible to take to such foods, for example, juices, mineral waters, isotonic drinks (usually drunk during sport training), muesli, dry breakfasts, bakegoods and, certainly, sucklings and soul-milk foods. The main task of the enriched foods consists in strengthening of health of a man, decline of risk of different diseases and removal of deficit of the matters necessary to the organism. The table of contents of vitamins and microelements in the enriched foods is figured out in accordance with the average daily necessity of a man. One portion provides on the average from 30 to 50% of the recommended norm of consumption.

Let’s now analyze the category of the healthy food.  These are functional foods. They combine in itself properties of the enriched foods and bioactive additions to the food. Addition of certain extractions from vegetable and animal raw material results in that foods begin to be of the specific use: to normalize the exchange processes, regulate concrete physiological functions, biochemical reactions and to stimulate the work of the immune system. Often the derivatives of soy are added to the functional products: fibres, protein, lecithin. They are used for the production of forcemeat, sausage, mayonnaise, pastas et cetera. Many producers mix up a few useful foods in one. Such foods do not get in the category of the functional ones, but their efficiency does not diminish from it. The division of functional and enriched foods is supported by not all specialists. This is marketing.

With the increasing of usage of healthy food its production is also increased. A producer must somehow distinguish the products. That is why he gives the different incomprehensible names to it. There are also “fitness-products”, “innovative products” et cetera. Probably, they have some important from the medical point of view distinctions, but from the point of view of a consumer they fall into one category – healthy food”. (more…)

Diminishing in the rations of feed of vegetables, rich in cellular tissue, is unindifferently, as the lack of cellulose is one of the factors of risk of diseases of the gastrointestinal tract, diabetes mellitus, atherosclerosis, coronary heart disease. The level of the cholesterol in blood proportionally depends on the cellulose. And, although the mechanism of the action of cellulose is not studied enough yet, it is already known that the methylcellulose links the ammonia in thick bowels, dietary fibers link water, being also the absorbents of organic matters, strengthen the evacuator function of bowels, destroy fat and bilious acids.

But, unfortunately, plants are subjected to the seasonality of growth, climatic terms of environment, the underestimation of vegetables by the population also plays a role.

Violation of diet plays a negative role to the health. It shows up in the diminishing of amount of eatings  a day from four-five to two, maldistribution of the day’s ration on separate receptions, increase of supper to 35-65% instead of 20%, increase of the intervals between eatings from 4-5  to 7-8. Ensminger (1994) said that for many years three rules of nutrition have been formulated: variety, moderation and timeliness. Unfortunately, the speeding of rate of life of the students cast aside all these rules. To take all students which in pursuit after knowledge completely leave from caring about the health. Not only they are guilty but also the whole educational system, society itself, although who needs a sick newly made engineer.

Recently the students began to pay attention to the quantity of calories put in the products. The power value of food is measured in the calories. A big a calorie is an amount of heat, necessary for the heating of one litre of water on one degree. The power expenses of a man are expressed in the same units. The influx of energy in the organism with food must be equal to the expense of the energy on a certain work for the weight of the grown man to remain unchanging at maintenance of the normal functional state. Here is the basic principle of rational feed, taking into account the climatic and seasonal conditions, age and sex of people. But the main index of energyexchange is the size of physical activity. Thus oscillations in metabolism can be very considerable. For example, the exchange processes in the energetically working skeletal muscle can grow in 1000 times as compared to the muscle, being at peace. (more…)
