Basic breaches in nutrition, observed in different age-related and professional groups are usually identical. This is, first of all, of carbohydrates and fats of animal origin surplus in food and deficit of vegetables, fruit and berries, and also the most frightful consequence of change of the life rhythm is the breach of nutrition.
Each of these breaches, even taken separately, may influence on the state of health of a man. Let’s now analyze every of these breaches.
At surplus of carbohydrates, especially clean sugars, physiologically there is a delay of water in the organism, an edema is marked, the expense of vitamin В1 rises and as a result-deficit of В1, leading to the breach of activity of the central nervous system. Now there is no doubt, that consumption of plenty of sugar (especially white refined) is very harmful for the organism. At the correct construction of feed it is necessary to aspire to diminish the consumption of white sugar due to the artificial substitutes of sugar, honey, jam, canned fruits.
As to the surplus of animal fats and deficit of fats of phytogenous, there are no special complications to avoid this violation in nutrition. It is only necessary to give to the population the information about a necessity to enter daily in the ration 20-30 gramme of vegetable fat, instead of 5-10, because excepting the vegetable fat from the ration of feed, humanity deprives itself of polyunsaturated fat acids (PUFA), in particular case of linolic and linolenic ones, which are essential for the activity of myocardium, cells of liver, of brain and gonads. They are the building material of cellular membranes, of connective tissue, myelin and they enter in the composition of the nucleic acids. Polyunsaturated fat acids promote the excretion of cholesterol from the organism and increase the elasticity of vessels.
Also, saving a certain necessary level of the immune system, they protect the organism from the radiation. At the lack of polyunsaturated fat acids the cholesterol uniting with the saturated fat acids is stored in the walls of vessels and as a result – there is a morbidity of thromboses and tumours, gastric ulcers may appear.
In relate to Bender (1999) the deficit of vegetables, fruit, berries is more serious and is difficult to be removed. Studies of feed and food, conducted by different authors in different countries of the world showed that the consumption of vegetables leaves to wish the best.
Their value is enormous. They are the supplier of carbohydrates, vitamins and microelements, organic acids and pectin matters. Fruit and vegetables promote the appetite and assist the assimilation of other food, destroy toxins, possess the bactericidal properties, normalize the activity of the central nervous system, peripheral nervous system and gastrointestinal tract, promote capacity of a person for work, posses the organoleptic properties, betraying different taste to the consumable food. Vegetables do the ration of nutrition more delicious and useful. Vegetables, fruit and berries occupy the honoured place in the dietary and medical nutrition. Some of them strengthen the lactation, also tell on the quality of pectoral milk. From data of the institute of nutrition of theAcademyofMedical Sciences, on the average it is needed 500-700 gramme of these foods for a man a day. Thus it must contain no less than 10-15 names.
It is necessary to acknowledge that the attempts to replace vegetables by other foods and artificial additions were not crowned by success.
